The rain was so heavy last night.
I was'nt surprised to see this flooding in out back yard this morning.
It was hailing when I dropped the kids off to school...(dont you love that, always at drop off or pick up time!!)
Each time Ive baked this week, Ive been searching for my spatulas.

So a cold wet day deserves some play time at home with Mum for Miss E.
And an Orange Cake to be baked.
At Kindergym this week, one of the Mums bought in a whole box of delicious oranges from her tree.
I had to have some and they are the juciest oranges I have ever had.

A while ago, my friend Judith, gave me this recipe for Orange Cake and it is a real winner.
Orange Cake
Cake
1/2 cup coconut
1/2 cup milk
125g butter
1 cup caster sugar
1 tbs grated orange rind
2 eggs
1 1/2 cups SR flour
1/2 cup milk
Combine coconut and first lot of milk and stand for 1 hour.
Cream butter, sugar and orange rind until light and fluffy.
Beat eggs into mixture.
Add flour, milk and coconut mixture, and combine.
Bake at 180C for 43 minutes.
Icing
1 1/2 cups icing sugar
1 tbs butter melted
1 1/2 tbs orange juice
Mix together until smooth.
Slather on top of the cake when just taken out of the oven and still hot, to form a glaze.

But I did find them here....
Love the 'drumsticks'! Wasn't the rain/hail just too much? A bit over it... but any excuse for cake hey. That looks delicious. I like the idea of soaking the coconut.
